Baking Binge

Unfortunately I have been doing incredibly poorly on my reading lately... and I've been on a baking binge instead.  Last week I spent a day with my 95 year old grandma baking some of her cinnamon chocolate chip cookies and apple pie, I also made 18 strawberry tartlettes for Prom, rootbeer cookies, practice orange cupcakes for a bridal shower, 90 orange cupcakes for the bridal shower, and chocolate chip cookies with belgian chocolate (and thats just the notable stuff!).  Then yesterday, I figured out the best Peanut Butter cookies EVER!  The other recipes that I have for peanut butter cookies just don't quite do it for me... so I am glad to finally have one that does!  

PEANUT BUTTER COOKIES

  • 1/2 cup old-fashioned oats
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (2 sticks), at room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup chunky peanut butter
  • 1 cup firmly packed light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/4 cup granulated sugar

Directions

Preheat oven to 325 degrees F.

Line 2 heavy baking sheets with parchment paper. Finely chop the oats in a food processor. Add the flour, baking powder, baking soda, and salt and pulse a few times. Set aside.

Using an electric mixer, beat the butter, peanut butters and sugars in a large bowl until fluffy. Beat in the eggs and vanilla. Add the flour mixture and stir just until blended. 

For each cookie, drop 1 rounded tablespoonful of dough into sugar, then place  onto sheet, spacing 1 inch apart. Press each cookie with a fork. Bake until the cookies are golden (cookies will flatten slightly), about 14 minutes. Cool the cookies on the baking sheets for 5 minutes. Transfer to a cooling rack and cool completely.

When are you going to having a cooking class for me??? I love peanut butter cookies so I can't wait to try these out. And why on earth are you making 90 cupcakes?
